Wagatomo has new CNY omakase in Tanjong Pagar

If you’re looking for somewhere fancy without making too much of a dent in your pocket to celebrate the upcoming Chinese New Year (CNY), consider heading to Wagatomo at Guoco Tower. Their all-new, eight-course CNY Omakase Menu that runs from now till 4 February 2023 is priced from $98++ a person, with a minimum of two diners required.

To start off the omakase experience is Wagatomo’s Japanese-style Auspicious Yu Sheng, which features carefully selected, premium Japanese ingredients. Unlike your standard yu sheng, this Japanese take starts with a base of fresh and pickled daikon, carrot, chuka wakame, cucumber, and fennel, and is paired with pickled ginger, sesame oil, micro shiso leaves, sunchoke chips, crispy chicken skin, and candied nuts. 

It’s dressed with a calamansi-ume sauce, and served with salmon sashimi. Upgrade this to fatty chutoro for $20++ a diner! This yu sheng, with chutoro, is available for a la carte orders at $88++ and serves four to six. 

Next on the menu is their signature thin-crust A5 Wagyu Pizza, starring the same premium Wagyu that’s sold at sister restaurant Gyu San. The crisp base is slathered with citrusy ponzu mayonnaise, yuzu kosho cream, truffle oil and pickled myoga, AKA Japanese ginger. 

Another highlight on the omakase menu is the Toothfish course, where the highly prized, flaky white fish, known for its buttery, sweet flavour, is steamed in sake and served with soy dashi.

After the fish, you can expect Chef Tomoyuki Kiga’s Surf n’ Turf Bao. This new dish comes as a pair of lotus leaf bao, respectively holding tender braised pork belly, and soft shell crab tempura. The last savoury dish is another Wagyu-centric, yoshoku one━Braised A5 Shank, served on mushroom rice with Hayashi sauce.

Finally, end your CNY omakase with their Mandarin Tart, comprising yuzu custard and festive mandarin orange.
