Shi Miao Dao Yunnan Rice Noodle specializes in serving Yunnan’s renowned “crossing-the-bridge” rice noodles. This particular noodle style derives its name from a captivating Chinese legend, recounting the daily journey of a woman in Yunnan who diligently crossed a bridge to deliver lunch to her husband. To maintain the noodles’ freshness and prevent them from becoming soggy, she ingeniously packed the hot soup and ingredients separately, only mixing them when her husband was prepared to enjoy his meal.
Vermicelli and a variety of ingredients are swiftly immersed in a steaming bowl of soup, cooking in just 10 seconds, hence the name ‘十秒到’ or ‘arrive in ten seconds.’ Their unique rice noodles are nearly as wide as our thick rice noodles but possess a silkier and lighter texture, making them ideal for slurping. They have a multitude of soup bases for you to choose from, such as Golden Hot and Sour Soup, Healthy Tomato and Szechan Mala, all priced at $5.80.

We decided to dive into one of their crowd-pleasers, the Famous Crossing Bridge Rice Noodle Soup ($5.80). The standout feature of this dish is its meticulously prepared broth. A combination of chicken and pork bones is simmered for a full six hours, resulting in a soup with a naturally sweet and creamy-white base that’s hard to resist.

This satisfying bowl includes tender pork slices, black fungus, quail eggs, napa cabbage, and enoki mushrooms – perfect for those who prefer a variety of ingredients. The star of the show, however, is the generous serving of thick, velvety-smooth beehoon, ensuring you won’t leave the table hungry.
