If you’ve had the chance to visit Bukit Merah View Hawker Centre, you’ll recognise the lengthy queue for Chai Chuan Tou Yang Rou Tang. With a history spanning over 35 years, this famous mutton soup stall recently clinched a mention on the 2023 Michelin Bib Gourmand!

Here, customers can enjoy a variety of ingredients with their Mutton Soup (from $6), including meatballs, tendon, tripe, and even mutton brain.

Whipping up this mouthwatering dish is no small feat. Every morning, the hawkers carefully prepare the fresh mutton, allowing the meat to simmer for up to three hours until it’s meltingly tender.
The mutton soup here is cooked Teochew-style, which gives it a gentle peppery note. Online reviews have also lauded the broth’s robust flavour, enhanced by herbal undertones that aren’t too overpowering. You can request an extra serving of soup too—for free!

As for the meat, it’s said to be well-cooked with a hint of sweetness. Chai Chuan Tou opts for New Zealand mutton in their soup, which is known for being less gamey compared to the commonly used Australian lamb. The meat is best savoured with a dip of their zesty chilli sauce.
