Owned by Hui Wei, Hui Wei Chilli Ban Mian is a popular stall at Geylang Bahru Market and Food Centre that is well-loved by the residents around the area. It’s so popular, there are those who are willing to travel across the island just for this scrumptious and comforting bowl of noodles. Don’t be surprised to find a long queue forming up as soon as they open.

Hui Wei makes her own dough and noodles from scratch which is something not every ban mian stall does, setting her stall apart from the rest! The stall serves a variety of dishes like Sliced Fish Soup, Sliced Abalone La Mian, and Ee Mian but it’s definitely their Chilli Ban Mian that is a must-try!

The Signature Chilli Ban Mian ($5) features their al dente handmade noodles with a generous serving of minced meat, meatballs, and an egg. The dish is then topped with ikan bilis, fried shallots, and spring onions to give you one tasty bowl of noodles. Be sure to have a good mix of the chilli and their special dark sauce for the perfect harmony of flavours.

Just when you thought it couldn’t get any tastier, in comes the flavours of the ingredients. Each ingredient brings a different dimension of flavour and texture to each bite, making it simply delicious. To top it off, the perfectly cooked egg yolk adds a beautiful layer of creaminess to the noodles.

As mentioned before, the chilli seriously packs a punch so be sure to ask for less chilli for those who can’t handle their spice. Some customers have mentioned even a small scoop of chilli already has quite a kick to it. For those who love their spice, this is the perfect dish to try and test your spice tolerance.
