Niu Dian Beef Noodles from Taiwan is opening in Balestier

If you’ve ever been to Taiwan, you’ll know that the Taiwanese love their beef noodles. They love it so much, there is an annual beef noodle festival in Taipei, where chefs and restaurants battle it out for the flex of having the best beef noodles in the country. Luckily for us, one of the best can now be found in Singapore, when Niu Dian Beef Noodles opens in VIIO @ Balestier on 13 February 2023

Niu Dian started out as a humble eatery in Taipei’s Ximending district, aiming to share the nostalgic taste of Taiwanese beef noodles that the chef remembered from his childhood. 18 years and three consecutive Michelin Bib Gourmand listings later, the classy new restaurant in Balestier is Niu Dian’s first store outside of Taiwan.

The new restaurant is slated to feature many favourites off the Taiwanese menu, such as Niu Dian’s signature Combination Specialty Beef Noodles (price TBC), which features QQ handmade noodles and tender beef in their original or braised broth: this might be what’s known as 红烧 (hóng shāo) broth at their Taiwan joints, AKA a spicy soup.

The premium Australian beef complementing the noodles includes boneless beef rib fingers, golden beef coins, tripe, and tendons.

Niu Dian’s broths are simmered for 24 hours, ensuring that the flavours of local beef bone and Australian short ribs are distilled into a fragrant, rich soup. It’s so good, the Michelin guide declared their broth as one of the best things about the beef noodles.

There’s something for those of us who prefer our noodles dry too. The Spicy Pepper Combination Specialty Beef Noodles (price TBC) is everything people love about Niu Dian’s signature dish, but tossed with a spicy sauce instead. It’s made from stirfrying Sichuan peppers with their signature beef marrow oil for over an hour, giving the dish an aromatic, robust kick.

Just like in Taiwan, Niu Dian Singapore will offer sides such as crunchy pickled cucumbers and braised tofu to snack on, alongside your mains. 

Prices for the Singapore menu aren’t fixed yet, but we’ll update this article when we know more.
