ilmiri x Chunpoong Brewery Rice Wine Collaboration

Enjoy two types of rice wine – Mijiu and Makgeolli, imported weekly via a cold chain from Korea to preserve the live yeast. Chunpoong Brewery is the most iconic brewery in Korea and has recently been ranked the highest in the first blind evaluation conducted by JoongAng Ilbo, Korea’s representative media outlet. The Chunpoong Miju has received praise from the LVMH wine expert on its taste and aroma, comparing it to the white wine of Burgundy, France.

Ilmiri’s Chunpoong Miju stands out with its unique selling points, offering a captivating blend of Tangerine and Vanilla aroma. The rice wine offers the perfect balance of sweetness and acidity, with five different flavours of Schisandra to enjoy.

The secret of the Chunpoong Miju/Makgeolli is the use of AIOT-based equipment technology, added to the 104 years of fermentation experience. This ensures the production of the highest quality of Makgeolli. Crafted with selected organic rice, the initial pour reveals a crystal-clear liquid with a silky mouthfeel and an array of natural fruit notes. When shaken, it adds another layer of creaminess and richness.

Rooted in a heritage of a thousand years of fermentation science, this exceptional brew stands as a testament to its rich lineage. Boasting an extraordinary flavor profile and captivating aroma, the taste is a harmonious blend of the five tastes that a human tongue can sense, including notes of apples, bananas, peaches, pineapples, oranges, grapes, and melons.

Chunpoong Miju – Volume: 720ml / ABV: 12%

Crafted with carefully selected organic rice and nuruk (natural fermentation starter), the first sip of yakju (filtered & clear) delivers a silky mouthfeel with natural fruit notes. When shaken and savoured as takju (unfiltered & hazy), it adds another layer of creamy and rich texture.

The smooth and stable tastes are achieved through a longer fermentation process. Bottled only after complete fermentation, the reduced carbonation minimizes post-fermentation effects, while hangover-causing substances are volatilized as much as possible to minimize hangovers. This ensures a refined and enjoyable drinking experience.

It is recommended to savour the first glass as an aperitif, by pouring only the clear top layer. Do note the Chunpoong Miju is best stored upright and should be refrigerated between 1 to 4 degrees Celsius.
