Ah Er Soup has famous traditional herbal soup in Redhill

Located at ABC Brickworks Market & Food Centre, Ah Er Soup is famously known for their traditional herbal soup, long queues and their surprise entrance in the Michelin Bib Gourmand Singapore 2017. The humble hawker stall was established in 2012 by Chen Hua Qiang and his wife Qu Fa Di, who are both originally from Guilin, China.

Ah Er Soup now has eight stalls across Singapore, including ones at Yuan Ching Road and Ang Mo Kio Avenue 4. While all stalls provide similar menu offerings, the soups from each branch differ slightly in taste due to each chef’s personal cooking style.

Mr Chen offers eight types of soups at his stall: Buddha Jumps Over The Wall ($7), Ten Tonic Ginseng Chicken Soup ($5.50), Herbal Ginseng Black Chicken Soup ($6), Gingko Pork Tripe Pepper Soup ($5.50), Lotus Root Peanut Pork Ribs Soup ($4.50), Watercress Pork Ribs Soup ($4.50), Old Cucumber Pork Rib Soup ($4.50), and ABC Pork Rib Soup ($4.50).

Don’t be fooled by the clear-looking soups, as they are packed with rich flavours and chock full of premium ingredients.

The brand’s take on Buddha Jumps Over The Wall is possibly the cheapest you can find in Singapore. It’s packed with thick chunks of fish maw, Chinese mushrooms, abalone, and chicken, and features a full-bodied broth that has been boiled for over two hours. While Ah Er Soup’s rendition does not include the usual ingredients such as shark fin, sea cucumber, and scallops, it’s definitely still “luxurious” for its price.

The Herbal Ginseng Black Chicken Soup is another crowd favourite, featuring a heady broth with well-balanced flavours of savoury and herbal notes. It also comes with a huge chicken drumstick, which is said to be incredibly tender.

Simpler offerings such as the Lotus Root Peanut Pork Ribs Soup and Old Cucumber Pork Rib Soup are also popular items that tend to sell out fast. The Watercress Pork Ribs Soup is said to have a home-cooked taste and has the lightest flavour out of all the soups.

You can pair your soups with an additional bowl of white rice for a more complete meal. There are four types of rice here: Steamed Rice, Brown Rice, Pumpkin Rice, and Olive Rice, priced at $0.50 per bowl. The Olive Rice is supposedly the most fragrant, while the Pumpkin Rice is said to have a flavour similar to yam rice.
