Starting as an American Bistro in 2010, Liberty Hong Kong has since become the go-to spot for after-work drinks and trendy plates for corporate groups and date nights. Its current menu is attributed to the contributions of Michelin-starred chef predecessors, including Vicky Cheung and Bjorn Alexander.

Liberty Singapore stands as the group’s first flagship overseas and brings together the talents of Hong Kong-based Chefs Yong Soo-Do and Chris Tuthill. The duo promises to deliver delectable East-meets-West dishes like tea-smoked poultry or fish, Korean kalbi-marinated whole rib, and maple syrup-glazed char siu pork belly.

What’s On The Menu

Crafted by Chefs Yong and Tuthill, the menu at Liberty Singapore offers a culinary journey inspired by the diversity of Asia. From the flavors of Korea and Japan to the culinary traditions of China and India, each dish is prepared using the wood-fire techniques of Texas-style barbecue.

1. Hamachi ($28)

The Hamachi elevates the succulence of kingfish through a delicate grilling process and is paired with vibrant mango Ponzu salsa made from pomelo, shallots, and jalapeño. The finishing touch involves a drizzle of coriander oil, adding a burst of freshness and aromatic finesse to the dish.

2. Prawn Tagliatelle ($32)

For pasta lovers, Tagliatelle pasta is accompanied by two large tiger prawns immersed in a flavorful Sambal Bisque sauce.  Garnished with Tobiko and Negi, this dish promises delicious profiles of spice, savouriness, and flavours of seafood.

3. Short-Rib Dumpling ($22)

Celebrate the bold flavors of Asia with the Short-Rib Dumpling, where succulent beef brisket and short ribs come together as a delectable filling. These dumplings are served alongside a medley of local black vinegar, crispy chilli sauce, fried garlic, and fresh Asian salad.

4. Char Siu Pork Belly ($24/100g)

Enjoy robust flavours with the Char Siu Pork Belly, featuring succulent char siu that has been smoked for over 16 hours. Fresh spring onions are used as a prominent star topping rather than a mere garnish, giving the dish a Korean-inspired transformation. Additionally, to balance the richness of the pork belly, it is paired with a velvety green puree crafted from fresh spring onions and ginger.

5. Kalbi Short-Rib ($32/100g)

The exquisite Kalbi Short-Rib features tender short ribs smoked for 12 hours in cherry wood, followed by an additional slow-cooking of 6 hours in sous vide. The result is succulent meat that simply falls off the bone. It is paired with a refreshing spring onion salad, providing a delightful splash of freshness and crunch that pairs perfectly with the short ribs.
