Run by Alvan Chew, BBraise was previously a home-based business before he opened his hawker stall in early February this year. He started on his F&B journey when he decided to help out at his friend’s hawker stall after quitting Singapore Airlines in 2019.

Why serve braised meats then? Well, it’s because it’s one of his favourite foods! Offering three main dishes – Braised Pork Rice, Braised Trotter Rice, and Braised Chicken Rice, BBraise also offers sides like their incredibly popular B Fry, which is deep-fried braised pork belly and one of their best-sellers.

Lu Rou Fan ($6)

For $6, the Lu Rou Fan is served with succulent pieces of pork belly, vegetables, and an onsen egg. As the onsen egg is pretty average, you can honestly do without it and get the $5 version instead. A generous amount of sauce is ladled over the rice, giving a good balance of sweetness and savouriness.

Compared to your typical Lu Rou Fan, the meat is usually in smaller bite sizes whereas the meat here is in bigger chunks. Rest assured that won’t bother you as soon as you take a bite of Bbraise’s pork belly!

The pork belly is flavourful and incredibly tender, with the layer of fats melting beautifully with each bite. Elevating the pork is the chilli sauce, giving amazing dimensions of tang, sweetness and spice for the perfect balance of flavours!

B Fry ($4)

Up next, the B Fry, or deep-fried braised pork belly is definitely a must-try. You can opt to get it as a side dish ($4) or you can simply top up an additional $1 to your mains. The thickness of the batter is just right, allowing you to enjoy the crispy exterior while still savouring the juicy and tender meat. Additionally, the meat is perfectly cooked, allowing the layer of fats to melt as you bite into it.

One note however is that some pieces are purely layers of fat which might not appeal to some people. The batter is well-seasoned and goes well with the flavour of the pork, with the chilli sauce adding a delightful oomph. If you’re looking for a sharing dish, this is certainly a good option.
